It’s hot out there, and I’m currently obsessed with this strawberry-banana vegan ice cream! It’s made with just three ingredients: strawberries, banana and coconut cream. You get a boost of fruit from every serving. Plus, it’s naturally sweetened by the ripe banana, so you don’t gotta worry about added sugar. If you want to get fancy, top it with chopped nuts and fruit.
Even though I don’t have a sweet tooth I do have an “ice cream tooth,” especially when things start to heat up in the summer. I love to end an evening meal with some ice cream but this tasty treat can really add up. We all know that added sugar is not great for our health or our waistlines. Of course, the dietitian-me knows full-fat, sugar added ice cream is perfectly fine if I enjoy it as an occasional treat, and I do. But, I also know that I want something cold and sweet for dinner every night, so what’s a gal to do?
I started looking for a healthified ice cream hack. The easiest one I found was just to freeze fruit-flavored Greek yogurt. It was an acceptable replacement, but not quite as creamy or delicious as this recipe. Lucky me, we’ve reached strawberry season so I’ve been churning out this ice cream almost every night! Technically, the ice cream isn’t churned. It’s made in my dinosaur food processor, which can only fit two servings worth of ice cream every night (boo!).
If you have a larger, newer food processor you can double, triple or quadruple this recipe and freeze the leftovers for later. I’ve noted this in the recipe below. I realize the ice cream photo is a bit mushy looking. Keep in mind that you will get soft-serve if you don’t freeze this for a few hours after processing. Clearly, I couldn’t wait to dig in so I snapped the photo of this ice cream fresh out of the food processor 😛

Strawberry-Banana Vegan Ice Cream
Easy 3-ingredient vegan ice cream you can make with strawberries, banana and coconut cream! Squash fruit cravings with real fruit instead of added sugar.
- 1 large ripe banana
- 3 medium strawberries
- 2 tablespoons coconut cream
Cut up the ripe bananas into large chunks, and halve the strawberries. Place them into a freezer safe container and freeze.
Add all the coconut cream into one well of an ice cube tray. If you don’t have one, line a small glass jar with plastic wrap and pour the cream in there. Freeze.
When ready to enjoy, add all ingredients to a food processor. Process until smooth. You can now enjoy it as soft serve! Freeze for and additional 3-5 hours if you want truer ice cream texture.
